2nd Saturday Coffee Cupping
Yet another great monthly cupping!!
For those of you who don’t know, Old Soul & Chocolate fish get together once a month on 2nd Saturday and cup coffee, talk coffee and inform about coffee. The best part about the event is that YOU the public are always invited!! Its fun and free and very informative. If you have ever wanted a more in-depth knowledge about specialty coffee and what makes it so spectacular, this is the event for you!

Todays cupping review
I put six coffees on the table today:
PNG, amuliba estate: This was not what i was hoping for. Nice rich walnut and earth in the aroma, but the cup was overwhelmingly grassy and inconsistent in flavor.
PNG, kigibah estate- Similar results in this coffee. Some nice aromatics-Malt, cinnamon and a maple essence. The cup was a bit gamey and wild. Also inconsistent from cup to cup.
The next two coffees were brought back from a cupping i attended last week at one of our importers office.
Brazil Daterra Estate, Red Burbon- This coffee is cupping better than i remember at the office. Clean full Sweet aromatics. The cup is very nice. Clear sweetness with a nice balanced acidity. Rich but mellow notes of muscivado sugar with a great finish.
Brazil Daterra Estate, Sweet Blue( mundo nuvo)- With soft and delicate aromatics this cup shows great potential. Vanilla, cream soda, with a nice poppy acidity. soft round & balanced cup.
Overall, a very interesting table with unexpected yummies and unexpected not so yummies.

Morning cupping..
Today I decided to cup at an earlier time (9am). Actually, i couldn’t wait. You see, i roasted a bunch of coffee samples on friday, and my curiosity of their flavors is what cornered me into cupping them right when i walked in the door this morning( coffee roasters=weird people).
So to the matter at hand, the coffees:
1.El Salvador- Matalapa Estate
2.El Salvador- Siberia Estate
3.Flores-Bajawa #1
4.Flores-Bajawa #2
5.Flores-Nguva
WOW! What a great way to start off the day! Some amazing cups.
The Breakdown:
Matalapa Estate- Great clarity, amazingly sweet & crisp. Mild citrus, soft & well balanced.
Siberia Estate- An amazing example of an El Salvador burbon, Rich sweetness, Deep character, clove spices and soft brightness.
Flores #1 & 2- These came out great! Thick & viscus. All heavies here, low acidity and great nuanced complexities. Loads of nutty flavors, cashews and macadamia with a nice simple syrupy coating.
I find it best to cup coffees until they are at least 7 days off roast. Coffees tend to “open up” their flavors as they age. It was an amazing first session with theses coffees & im exited to see what they become.

Holiday coffee…
Today were sample roasting two amazing El Salvadorian coffees: Matalapa Estate (100% burbon) & Siberia Estate (100% burbon).
We cupped these coffees a couple of months ago and just couldn’t get their flavors of our minds!! Old Soul has never had an El Salvador coffee before, you can put your money on seeing one of these beautiful coffees right around the holidays!!
El Salvador here we come!!

Guatemala “Bella Carmona” COMING SOON!!!
The Bella Carmona estate is nestled between the Agua and Acatenango Volcanoes where Luis Zelaya and his family have cultivated this beautiful farm for over a century now. Bella Carmona is one of the oldest and well known trademarks of Genuine Antigua Coffee.
Features a rich cocoa flavor followed by spices, and a hint of fruit on the finish. The Bella Carmona also offers a nice medium acidity supported by a rich full body.
This coffee is on its way!!!!

Coffee of the week
Costa Rica “Garabito” Microlot
We purchased half of this 25 bag microlot this year and im not regretting it one bit!! This coffee was processed in a method not typically used in Central America, the pulped natural or honey process is when there is fruit pulp left on the beans as they dry. This imparts a sweet subtle fruitiness to the cup, heightens its viscosity and brings down its brightness a bit.
These coffees can be a bit tricky to roast, but well worth the trials…This cup boasts an amazing fruity sweetness upfront with a great syrupy viscous character.
Stop by one of the shops to pick up a pound or a jar while this coffee is still around!!!
