Our Decaf Ethiopia offering is a mixed lot from Producers who have small farms in the fertile red clay soil of the Rift Valley. These farmers combine their coffees at different mills, where it is processed and then sent to the Ethiopia Commodity Exchange to be bought at auction.
Our coffee from Ethiopia is harvested, processed, sun dried down to 11% moisture, rested for up to 30 days, then dry milled, and after being bought at Auction sent to the Descamex Plant in Mexico where it goes through the process of decaffeination. Descamex is the premier quality decaffeination company in the world when it comes to using the preferred water process method. Descamex opened in 1983 and became the first decaffeination plant in all of Latin America. Their unique process:
Using pure water from the highest volcanic mountain in Mexico (Pico de Orizaba), the green beans are immersed in water in order to extract the caffeine. The water contains the soluble components of the coffee beans which holds the elements of the flavor so that during the decaffeination process the beans retain much of their natural flavor. To separate the caffeine from the water containing the soluble components, the water passes through a special filter which removes the caffeine.
As a result of this process, Descamex obtains beans that are 99.9% caffeine free. Once the beans have gone through the process, they are dried, repackaged in 152-lb bags and shipped to Old Soul through our Importer in Emeryville (Royal Coffee).
