Our specific lot is from the La Pastora farm, one of four small farms owned by the husband and wife duo of Carlos and Lucia Montero. After the ripe cherries are harvested at the La Pastora farm, they are immediately brought over to the family’s three-year-old Micro-mill for processing and drying. The Don Eli Micro-mill is one of the cleanest mills we saw in our travels this year and highlights the attention to detail and quality that defines the Montero’s devotion to Specialty coffee. Total overall production at the La Pastora farm is approximately 75 bags, of which we were able to secure 12!
