We’ve been working with our importing and quality control partners, Catalyst Trade, in Ethiopia for the last 6 years, and it has been an epic journey filled with multiple award-winning coffees and a lot of “firsts.”
This rare two bag lot is sourced from numerous small Producers in the remote village of Wush Wush. Often called “Garden Farmers,” because they pick the cherries from trees that naturally grow in the small plots of their land along with other fruits and vegetables.
About Limited Oxygen Processing:
Once the ripe cherries are picked and brought to the processing station, the cherries are floated in water and then pulped. Normally, the parchment would then be laid out to dry. In the limited oxygen process, however, the freshly pulped parchment is put in grain pro bags that are then sealed and placed in a shaded area for the first part of their fermentation. The aim of this unique technique is to intensify the clarity of the cup profile and boost the intrinsic fruit notes and sweetness that Wush Wush is famously know for.
